thousand layer apple cake




we have oodles of apples to pick!

our wonky weather this summer has made many varieties very late to ripen. 

we are just beginning to pick our mutsu, ambrosia and empire apples. 

also available are our 

jonagold, russet, cortland, idared, royal gala, smoothie, 

golden delicious, and red delicious apples.




mutsu


worth the wait! 

mutsus are so terrific for any recipe you can think of that calls for apples!

firm, juicy, and full of character.. so refreshing out of hand! 

their tart flavour will become sweeter later in the harvest. 

they keep very well in your fridge. 




ambrosia


another fabulous apple that is wonderful fresh 

and can also be used in all recipes! 

ambrosias resist browning, which makes them an excellent choice for a

 charcuterie board or salad. 




empire


don’t they look like jewels?

empire apples are a favourite for many reasons,

 besides being sweet, crisp and juicy.

they don’t bruise easily.. so packing them as a snack is brilliant. 

their small size is ideal for small hands. 

they can be enjoyed fresh and also in pies, cakes, grilled cheese, sauce.






i welcome the colder days.. it makes being in a cozy kitchen special. 

i love to bake.. and try new recipes. 

using our idareds, i made this invisible apple cake.




this french dessert gets its name from the way its layers of thinly sliced apples

 seemingly disappear into the creamy custard like cake.  

it’s also known as thousand layer apple cake.

 it is a lovely fruity, light dessert.. extra lovely when served with maple syrup! 

 it calls for maple sugar, which i didn’t have, but i made it! 

now there’s a magic trick! 

you just boil maple syrup until it reaches 125 C ° and then 

stir vigorousy with a wooden spoon for about 5 minutes, 

and the liquid suddenly becomes a sugar!







every week we pick apples to be pressed for cider. it is one time in the week i look forward to.. 

we are all together, side by side laughing and chatting, 

noticing and enjoying the changes in the orchards and valley.

the colours are spectacular now.
