apple pancakes

pancake tuesday! 

how fun!

for for breakfast, lunch or dinner,

 apple pancakes are always a good thing!  



this recipe is adapted from john mitzewich.

it makes 8 delicious small pancakes.

you’ll need:

 2 eggs

1 tablespoon sugar

1/4 teaspoon cinnamon

1/4 teaspoon ginger

1/4 teaspoon nutmeg

 1 teaspoon vanilla extract

 2 cups shredded apple.. i used 2 ambrosia apples

 2 teaspoons lemon juice

 1 cup all purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

 3 or 4 tablespoons butter

 


to make:

combine eggs, sugar, spices and vanilla in a bowl and whisk until lightly foamy.

add the shredded apple and lemon juice. fold with a spatula to evenly distribute the apple.

in a separate bowl, combine flour, baking powder, baking soda and salt.

add this to the apple mixture. mix until the flour disappears.

it will be a thick, lumpy batter.

over medium heat, melt 1 teaspoon of butter in a small skillet.

add 1/4 cup of the batter..  gently press to spread the batter out a little.

cook until browned.. a few minutes, and turn over for a few more.

add butter again to the pan for each pancake.

i had to turn the heat down to low and wipe out the too browned butter a couple of times when my cast iron pan got too hot.

serve with maple syrup (of course).

our kids like to combine melted butter and maple syrup and pour that over their pancakes.  it’s a 2/3 syrup, 1/3 butter combination. kinda dreamy.

toasted nuts would be a lovely addition too.
