well hello again!
i hope you are well! 
oh hasn't this been a spring to remember? 
like many families, we have been baking a little more.



this scandinavian apple cake has become a family favourite. 
spencer requested it as his birthday cake this year. 
i love it because it calls for cardamom, and rosehip jam. 
don’t worry if you don’t have rosehip jam. you can use apricot instead. 
did you know apples and roses belong to the same family?  





 scandinavian apple cake 

you will need:
1 7/8 cups of butter (300 grams) plus a little extra for the baking tin 
3 cups of sugar 
6 eggs
2  1/2 cups (300 grams) of all purpose flour 
2 teaspoons of baking powder
2 1/4 pounds of apples. about 9 small apples. 
we used ambrosia recently. 
mutsu, cortland, idared, spartan or empire apples 
would be wonderful too. 
the zest of 1 lemon 
1/2 teaspoon of ground cardamom 
2/3 cup of sliced or slivered almonds (i always use way more!)
3 1/2 ounces  (100 grams) of rose hip or apricot jam. about 1/3 of a cup.
don't worry if you don't have rosehip jam, you can use apricot jam instead. 



preheat oven to 350˚f
butter a 16 x12 inch baking tin
or a 9 inch spring form pan 
i used a 9 inch springform pan plus a tiny vintage cake tin and filled each 2/3 full. 
line the base with parchment paper. 
cream the butter and 2 1/2 cups of sugar until light and fluffy.
add the eggs one at a time, beating well after each addition.
sift the flour and the baking powder together and mix into the butter mixture until just combined. 
pour this into the prepared baking tin.


peel, slice and core the apples. toss them in a bowl with 1/2 cup of sugar, cardamom and the lemon zest.
place the apples on top of the cake batter, lightly pressing them in.



sprinkle the almonds on top.
bake for 45 minutes. 
in a saucepan on low heat, melt the jam with a little water, stirring until it melts. 
remove the cake from the oven, spread the melted jam evenly on the top
and  bake 10 to 15 minutes more or until a toothpick inserted into the middle of the cake comes out clean. 
leave in the tin to cool.
serve warm with crème fraîche or ice cream.  enjoy!
